These refreshing sushi rolls are a light, grain-free, and vegan appetizer that’s both nutritious and easy to prepare. Packed with healthy fats from avocado, minerals, and vitamins, they’re a simple way to enjoy a fresh and flavorful bite. To prepare them, first peel one English cucumber using a vegetable peeler, then slice it into thin ribbons. In a bowl, use a fork to mash one avocado and then sprinkle in salt and pepper, and add juice from half of a lemon. Next, place one strip of cucumber down flat and spread a thin layer of the avocado-mix from one end to the other. Lastly, sprinkle 10 grams (1 tablespoon) of hemp seeds and 1-2 grams (large pinch) of roughly chopped fresh mint and basil, then roll. Repeat these steps for the remainder of the cucumber strips.
