For big and small, vegan is the best way to live. Today I would like to share a tasty vegan snack. Line a small baking tray with parchment paper. Cut open 10-12 pitted medjool dates and press them down onto the sheet so that they are overlapping slightly and stick together. Use a spoon to spread 30 grams (two tablespoons) of drippy peanut butter over the dates and then sprinkle on 30 grams (two tablespoons) of chopped peanuts on top. Next, melt 95 grams (½ cup) of vegan chocolate with 4.5 grams (1 teaspoon) of coconut oil and drizzle it over the dates, spreading it out with a spoon so everything’s coated. Then sprinkle some flaky sea salt on top and freeze it for about 10-15 minutes until the chocolate sets. Take the baking sheet out of the freezer and cut the bark up into around 8-10 pieces. You can store your leftovers in the fridge or freezer. This is a treat that will surely satisfy your tastebuds!
